As part of my resolution to be healthier and more frugal I'm doing something weird this week.
Instead of spending money at the grocery store on the easy staples I use and making a big vat of soup or chili, I'm going to save my money and eat the food that's in my fridge and pantry.
I have soup here, edamame ready to be steamed and salted, rice & seitan for stir fry, meatless crumbles for burritos. Basically I just have to stop being lazy and cook and I'll be fine.
Let's see how this experiment goes. Are you a cook every day or once a week chef?
I did a similar thing on Saturday (posted about it here: http://veggingoutblog.com/2012/01/08/empty-pantry-scramble/). I don't have enough stocked to do it for a whole week, but I'm glad I did it. I felt clever and creative.
