I'm keeping it simple tonight... sinus hell plus several nights of not sleeping well (insomnia sucks, just so you know) and I'm exhausted and sickly tonight.
So I canceled my plans to take Bella on a playdate, which I fear she'll never forgive me for, and ended up eating some multi-grain cheerios and almond milk for dinner. Not the healthiest meal... but it's meat free so yay!
But I did find a yummy recipe I was going to try if I did have the energy to go to the store and eat... so here it is for someone feeling less like crap.
I discovered over the summer that I'm obsessed with eggplant... so this is on my to make list.
